The grapes for this top Carménère from the Colchagua Valley will be harvested in April when you reach your optimal ripening point. This is followed by a so-called cold maceration for 3 days. The grape must, together with the peel and the pulp, is cooled below 8 degrees. The must can take on a maximum of color pigments and flavors before the actual fermentation begins. Then the wine is fermented for 7 days in a stainless steel tank at temperatures between 28 and 30 ° C. Following this, the wine may continue to peel for another 2 weeks. Now the wine is separated from the mash and matured for 10-12 months. 60% of the wine is stored in barrels of American and French oak, while 40% of the wine remain in the steel tank, which remains in the final Assemblage a pleasantly fresh fruit.
Lively ruby red with brilliant violet reflections characterizes the Envero. On the nose it shows notes of blackberry, cassis, red pepper, chocolate, roasted coffee, tobacco and fine toast and vanilla notes. In the mouth it shows ripe and juicy. The soft tannins and its elegant concentration give it a velvety mouthfeel and a long finish.
This wine is a perfect accompaniment to refined grilled beef, lamb and poultry dishes.
