The grapes for this wine come from the Maipo Valley at the foot of the Andes, where the best Cabernet Sauvignon grapes of Chile thrive. The vines for this wine are on average 30 years old.
The grapes are hand-picked in April when they reach their optimal maturity. This is followed by a so-called cold maceration for 3 days. The grape must, together with the peel and the pulp, is cooled below 8 degrees. The must can take on a maximum of color pigments and flavors before the actual fermentation begins. Then the wine is fermented for 7 days in a stainless steel tank at temperatures between 28 and 30 ° C. Following this, the wine may continue to peel for another 2 weeks. Now the wine is separated from the mash and aged for 12 months in new barrels of French oak. Then he is allowed to mature for half a year in a steel tank before being bottled. Then he gets another 10 months bottle maturity before he finally comes into the trade.
The wine shows up in a deep ruby red. On the nose you can hear typical Cabernet flavors such as cassis, red pepper, cherry and raspberry, which are skilfully played by chocolate, vanilla, toast and tobacco notes. In the mouth, it presents itself soft and balanced with a subtle fresh acidity. The silky ripe tannins support the delicate notes of fruit and chocolate.
