In Los Altos de Jalisco, this tequila, which is obtained exclusively from the blue Weber agave, is still distilled today. The cooking process is carried out according to ancient tradition in old clay furnaces 24 hours, which causes a perfect conversion of the starch into sugar and thus is responsible for the consistent quality of HERENCIA MEXICANA.
AÑEJO: These premium tequilas have spent at least a year in wooden barrels, some even three years old. This results in a strong amber-like color and a complex but especially soft taste. Some tequilas with a particularly long maturation period (over 3 years) are called Extra Añejo. So that the aroma can develop optimally, you should enjoy añejo at room temperature from a sufficiently large glass (eg Cognac Swivel).
