A popular dish of the Yucatan region, cochinita pibil is made from smoked pork.
Pibil is a Mayan cooking technique that involves wrapping pork (or other meat) in banana leaves and marinating in sour orange and achiote. The meat is cooked for several hours in a hand-dug grill pit in the ground. This makes it tender and has a slightly smoky taste. Pibil is served with soft tortillas, accompanied by garlic rice, black beans, pickled onions and freshly grilled peppers.
Heat the filling and the tortillas separately in a pan or in the microwave and then fill the hot tortillas with meat and sauce to taste.
