At harvest time, all grapes are carefully harvested by hand in small reading boxes and brought to the winery. Here, Montes lets them macerate cold for seven days (at 9 ° C) and then starts the approximately ten-day alcoholic fermentation. Regular flooding of the mash removes the first colorings, aromas and gentle tannin from the skins. After fermentation is completed, the wine is aged for 12 months in new and used French oak barrels before being finally bottled unfiltered.
