This Carignan Collection comes from a vineyard in the Cauquenes region on the banks of the Cauquenes River. The soil is alluvial and clay type. He is poor and thin and has quartz. This vineyard from the 60s is cultivated with a head system and to this day all ground work is carried out on horseback. It is a "vineyard of the rule" or without irrigation, which allows a very limited production and a good concentration. The hand-harvested grapes are transported in boxes of 10-12 kg and transported at night to avoid oxidation due to higher temperatures.

Vineyards
Our Colección Carignan originates from a vineyard on the banks of the Cauquenes River with an alluvium made up of thin, poor clay and loam containing quartz. This vineyard was planted in bush vines in the 1960s, and until today agricultural work is done exclusively with horses. The vines are also completely dry managed, which allows a very limited production of highly concentrated grapes. The grapes harvested by hand are transported in containers of 10-12 kg. at night, to avoid any kind of oxidation.

Climate
This winery in the Maule region, the most traditional wine-growing zone in Chile, is located in the province of Cauquenes, just 50 km from the Pacific, between the coastal mountains and the Cauquenes-Clima River. The rain is concentrated mainly in winter with an annual average of 700 mm. The Mediterranean climate has an average of 22 ° C in summer (January) and 7 ° C in winter (July). The large temperature difference between day and night (above 18 ° C) promotes a great phenolic ripeness of the grape so that it retains its acidity while the tannins mature and soften, delivering a fresh and elegant carignan.

winemaking
The grapes are harvested at the end of April. In order to extract color and aromas, the grapes come successively through a selection list for grapes and then enter a small stainless steel tank (capacity 10,000 l), where they remain for four to six days with cold maceration (temperatures below 10 ° C). Fermentation with selected yeasts is then carried out at temperatures between 24 and 26 ° C for eight to ten days. Selective maceration after fermentation is carried out for only a few days before malolactic fermentation is completed in French oak barrels with one to two years prior use , The wine stays in the barrels for 12-14 months. Finally, the wine is mixed in a stainless steel tank and matured for three to four months before being bottled.
