Winemaking
The grapes are handpicked early in the morning on the third week of February to avoid oxidation. Then they are cooled and gently squeezed. Pellicular maceration is carried out to transfer the varietal character from the skin to the must. Alcoholic fermentation is carried out at low temperatures in stainless steel tanks to preserve the primary flavors.
